Orange Maple Sourdough Muffins
Ingredients
Wet Ingredients:
1 cup sourdough starter (active or discard)
3 large eggs
1 stick (1/2 cup) unsalted butter, melted and cooled
1 tablespoon coconut oil
1/3 cup maple syrup
1/2 teaspoon vanilla extract
1/3 cup milk
Juice of 1 medium-sized orange
Zest of 1 medium-sized orange
Dry Ingredients:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon ground cinnamon
Instructions
1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease the wells.
2. Mix Wet Ingredients: In a large mixing bowl, whisk together the sourdough starter, eggs, melted butter, coconut oil, maple syrup, vanilla extract, milk, orange juice, and orange zest until smooth and well combined.
3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, baking powder, and cinnamon.
4. Combine Wet and Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing to keep the muffins tender.
5. Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup to the top but leaving a small amount of room for expansion.
6. Bake: Bake in the preheated oven for 16–18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.
